How Big is a Small Egg?

In the US, the small egg size is determined by the combined weight of 12 eggs. In this case, small is equal to 18 ounces. However, it isn’t the smallest; the peewee size is 15 ounces.

How Eggs are Measured in the US

From peewee to small, the medium size eggs weigh 21 ounces. The large is equal to 12 eggs that weigh 24 ounces. The extra large is equivalent to 27 ounces. The jumbo is the same as 30 ounces.

Eggs in Canada

The pewee is less than 41 g. The small is 42-48 g. The medium Canadian egg is 49-55 g. The large one is 56-62 g. The extra large is 63-69 g while the jumbo is 70 g or more.

Europe

The European small egg size is 53 g and under. The medium is 53-63 g. The large is 63-73 g. Those 73 g and over are classified very large. The European and Canadian sizes are based on the mass per egg.

New Zealand

The sizes here are based on the minimum mass per egg. In their modern scale, the smallest is the pullet (size 4) at 35 g. Size 5 is medium at 44 g. Size 6 is the standard at 53 g. Size 7 is large and is 62 g. Size 8 is jumbo which is 68 g.

The traditional scale used in New Zealand is from size 0 to 7 with 0 being the heaviest. Size 0 is anything greater than 75g. Size 1 is 70 g – 75 g and size 2 is 65 g – 70 g. Size 3 is 60 g – 65 g. Size 4 is 55 g – 60 g. Size 5 is 50 g – 55 g and size 6 is 45 g – 50 g. Size 7 refers to eggs less than 45 g.

These small sizes are not as widely available as the larger ones. In the United States, the large size is the most popular. But the smaller sizes are available. But as the above data shows, their dimensions can vary from place to place. If you are making a recipe, make sure to get the egg sizes right.

It has to be stressed that the small egg size does not mean it does not stay as fresh as the large ones. If eggs are kept at temperatures of 40 F, they will last 3 to 5 weeks.
